Croissendo is my outlet to share with you the remarkable heaven we share on this planet when the butter is good, the lamination takes your breath away, and you want to go hug the pastry chef. If there is anywhere in life where arrogance and self-absorption is welcome, it is in the pastry chef who is making the best croissants - but do keep that arrogance in the kitchen…
